“We damn near messed up that boat so bad that we can never do a party on that cruise ship again. They banned us,” said Whoo Kid. “Somebody shatted and put a 20 dollar bill on the (expletive). They’re trying to go through all the cameras and try to figure out who (expletive) and put this $20 on there. On the VIP section by the pool.”

The question is who in VIP may have committed the…crime.

Steve Sayer of MeatingPlace, the home of all things meat, has much praise for Food Safety Scotland’s pink chicken advice, which is apparently grounded to “ensure that public information and advice on food safety, standards, and pink.chicken.fss.jun.16nutrition are accurate while being consumer-focused. It’s obvious that the FSS plucked the pink chicken mascot to warn Scottish consumers about the possibility of getting sick by consuming seemingly under-grilled/cooked chicken that’s still pink internally.

“However, the only exception was the insistence that the internal color of properly grilled chicken should never be pink.

“The USDA has long stated that reaching the internal temperature of 165 degrees F., (by measuring at the thickest part of the chicken) will kill pathogens and is safe to consume. The USDA has also claimed that the internal coloring is not always an accurate indicator whether chicken is properly cooked or grilled, which includes, you guessed it, the color pink.

“Don’t get me wrong, I think the Scot’s pink message bird is rather clever and its intent admirable, as it could very well lessen the amount of people undercooking their summer grilled chicken. But the fact remains it’s not completely accurate.”

It’s a f*ucking pink chicken and it’s wrong.

So how can anything else this science-based organization say be accepted as accurate?

Go with the data or go home.

Chapman, what’s going on? North Carolina couple charged with assaulting each other with pizza rolls

A Gastonia couple were arrested early Monday morning after police say they threw pizza rolls at each other.

pizza.rolls.ju;16At around 1 a.m. Monday, officers responded to a home in the 3100 block of Spring Valley Drive in Gastonia.

When officers arrived, the couple told them they got into an argument that led to the tossing of pizza rolls. Brad Scott Beard, 24, and Samantha Brook Canipe, 21, were each charged with simple assault in the incident.

Tajikistan concerned over increasing number of botulism cases

Asia Plus reports that Tajik Deputy Prime Minister, Azim Ibrohim, who also heads the Council for Food Safety Issues, has expressed concern about increasing number of botulism cases in Tajikistan.

Speaking at the meeting, Ibrohim demanded that heads of good safety management bodies give reports on implementation of the plan of work for the first half-year of 2016.

It was noted that the number of botulism cases has increased in the country and that the home-canned vegetables are the most common cause of botulism.

Ibrohim ordered the Ministry of Agriculture, the Ministry of Health and Social Protection and other relevant bodies to prepare the guide to home canning.

Ibrohim reportedly drew attention of meeting participants to slow introduction of the ISO 22000 standard.

 

Raw is risky: Canada reports 1st case this year of illness linked to eating raw oysters

CBC News reports British Columbia has recorded its first case this year of someone being sickened by eating raw oysters contaminated with Vibrio bacteria.

oysters.grillThe B.C. Centre for Disease Control (BCCDC) said the illness was reported June 30 in the Vancouver area.

Vibrio parahaemolyticus bacteria grow in seawater and can end up in shellfish like oysters and clams. When water temperatures rise in the summer, the accumulations of the naturally occurring bacteria increase to the point that eating undercooked shellfish can give people nausea, fever and diarrhea.

Last year’s outbreak of the Vibrio-caused illness was the biggest in Canadian history and sickened at least 73 British Columbians. Sixty of the illnesses were due to eating contaminated raw or undercooked B.C. oysters in restaurants. The other 13 illnesses were traced to exposure to seawater with high levels of the bacteria.

At the height of the outbreak last summer, Vancouver Coastal Health ordered restaurants not to serve raw oysters harvested from B.C. waters and the Canadian Food Inspection Agency issued a food recall for B.C. oysters. 

“Eating raw shellfish increases your risk of Vibrio and other infections,” said Dr. Eleni Galanis, epidemiologist at the BCCDC, in a release.  

“It’s best to eat them cooked, but if you choose to eat raw shellfish like oysters, then understand the risks and take steps to reduce your likelihood of illness.”

Meanwhile, Florida health officials have reported 13 Vibrio vulnificus cases as of July 5, including four fatalities thus far in 2016.

Last year, Florida saw 45 cases and 14 deaths, the most since 2003.

Healthy individuals typically develop a mild disease; however, Vibrio vulnificus infections can be a serious concern for people who have weakened immune systems, particularly those with chronic liver disease.

In other Virbrio news, UT Southwestern Medical Center researchers have uncovered a mechanism that a type of pathogenic bacteria found in shellfish use to sense when they are in the human gut, where they release toxins that cause food poisoning.

The researchers studied Vibrio parahaemolyticus, a globally spread, Gram-negative bacterium that contaminates shellfish in warm saltwater during the summer. The bacterium thrives in coastal waters and is the world’s leading cause of acute gastroenteritis.

“During recent years, rising temperatures in the ocean have contributed to this pathogen’s worldwide dissemination,” said Dr. Kim Orth, Professor of Molecular Biology and Biochemistry at UT Southwestern and senior author of the study, published today in the online journal eLife.

About a dozen Vibrio species cause infection in humans, according to the Centers for Disease Control and Prevention, and Vibrio parahaemolyticus is one of the three most common culprits. Vibrio infections cause an estimated 80,000 illnesses and 100 deaths in the United States every year.

The study found that two proteins made by Vibrio parahaemolyticus work together to detect and capture bile salts in the intestines of people who eat raw or undercooked seafood containing the bacteria.

“When a person eats, acids in the stomach help break down the meal, and bile salts in the intestine aid in the solubilization of fatty food. When humans eat raw or undercooked shellfish contaminated with Vibrio parahaemolyticus, the bacteria use those same bile salts as a signal to release toxins,” said Dr. Orth, also an Investigator with the Howard Hughes Medical Institute (HHMI), holder of the Earl A. Forsythe Chair in Biomedical Science, and a W.W. Caruth, Jr. Scholar in Biomedical Research. Dr. Orth studies the strategies that bacterial pathogens use to outsmart their host cells.

Evidence is increasing that several bacterial pathogens that cause gastrointestinal illness, including the extremely toxic Vibrio cholerae, sense bile salts. But until now, the mechanism that those pathogens use for doing this has remained unknown, Dr. Orth said. In previous studies, only one bacterial gene had been implicated in receiving and transmitting the gut-sensing signal, Dr. Orth said.

“We discovered that not one, but two genes are required for Vibrio to receive the bile salt signal. These genes encode two proteins that form a complex on the surface of the bacterial membrane. Using X-ray crystallography, we found that these proteins create a barrel-like structure that binds bile salts and receives the signal to tell the bacterial cell to start making toxins,” she said.

Future experiments will aim to understand how binding of bile salt by this protein complex induces the release of toxins.

“Ultimately, we want to understand how other pathogenic bacteria sense environmental cues to produce toxins. With this knowledge, we might be able to design pharmaceuticals that could prevent toxin production, and ultimately avoid the damaging effects of infections,” she said.

The receptor pair could possibly act as a model to discover sensors in other bacteria where pharmaceuticals might be more applicable, Dr. Orth said, adding “we are in the early stages of this research.”

Co-lead authors were graduate student Peng Li and research scientist Dr. Giomar Rivera-Cancel, both in Molecular Biology. Other contributing authors included Dr. Lisa Kinch, an HHMI bioinformatics specialist; Dr. Dor Salomon, postdoctoral researcher; Dr. Diana Tomchick, Professor of Biophysics and Biochemistry and Director of the Structural Biology Core Facility; and Dr. Nick Grishin, Professor of Biophysics and Biochemistry, an HHMI Investigator, and a Virginia Murchison Linthicum Scholar in Biomedical Research.

The research was supported by the National Institutes of Health, the Welch Foundation, the Department of Energy, and the HHMI.

And finally, bacterial infections from various organisms including Vibrio sp. pose a serious hazard to humans in many forms from clinical infection to affecting the yield of agriculture and aquaculture via infection of livestock. Vibrio sp. is one of the main foodborne pathogens causing human infection and is also a common cause of losses in the aquaculture industry. Prophylactic and therapeutic usage of antibiotics has become the mainstay of managing this problem, however this in turn led to the emergence of multidrug resistant strains of bacteria in the environment; which has raised awareness of the critical need for alternative non antibiotic based methods of preventing and treating bacterial infections. Bacteriophages – viruses that infect and result in the death of bacteria – are currently of great interest as a highly viable alternative to antibiotics. This article provides an insight into bacteriophage application in controlling Vibrio species as well underlining the advantages and drawbacks of phage therapy.

21 sickened: Salmonella outbreak at New York jail

Undercooked chicken served at the Suffolk jail in Riverhead led to a salmonella outbreak that sickened at least 21 inmates in May, health officials said.

One inmate who was hospitalized has filed a notice of claim with the county, a prelude to a lawsuit.

“Suffolk County comes with an affirmative obligation to supply its criminals in prison all food that’s free of any unhealthy or dangerous substance,” stated Andrew Siben a Bay Shore attorney representing the inmate, Shawn Carpenter.

2 sick with Salmonella linked to Seattle pub

King County health officials are investigating an outbreak of Salmonella linked to the Fadó Irish Pub & Restaurant in downtown Seattle.

fado-seattleTwo people in separate parties became sick after eating bacon cheeseburgers at the restaurant on June 16th.

Laboratory tests showed the two were infected with the same Salmonella bacteria.

Public Health workers inspected the restaurant last week and found several violations that may have caused the outbreak including: inadequate equipment cleaning and handwashing and poor handwashing facilities. The restaurant has since corrected those violations.

 

How do you clean your knives?

Improperly cleaned and sanitized chef knives present a potential contamination risk and a source for foodborne illness.

How-to-clean-a-kitchen-knife-300x200This study compared the efficacies of two cleaning methods (three-compartment manual dishwashing and sanitizer wiping) at removing food soils from contaminated chef knives.

Knife-washing procedures were standardized after observing knife-cleaning behavior in a kitchen. Adenosine triphosphate bioluminescence was used to measure levels of organic soils. Results indicated that the three-compartment manual dishwashing was more effective at removing food soils from knife surfaces than the sanitizer wiping (P < .0001). This study also assessed the influence of other factors on the soil removal efficacies.

Health Canada proposes rules for veterinary drugs in livestock

John Cotter of Canadian Press reports the Canadian government is proposing new rules for veterinary drugs used in livestock as it works to reduce human health risks associated with resistance to antibiotics and other antimicrobials.

ab.prudentHealth Canada says the decreasing effectiveness of antimicrobials is having a significant impact on the government’s ability to protect Canadians from infectious diseases.

“The overuse and misuse of antimicrobials in animals is a contributing factor to the development and spread of AMR (antimicrobial-resistance),” reads a summary of the proposed rules.

“The development of antimicrobial-resistant pathogens in animals can pose serious risks to human health when they are transmitted as food-borne or water-borne contaminants. Antimicrobial-resistant infections are associated with a greater risk of death, more complex illnesses, longer hospital stays and higher treatment costs.”

The department says current regulations do not provide the necessary regulatory oversight to mitigate the risk.

The proposed changes would restrict the importation of some veterinary drugs used in livestock, require drug manufacturers to follow stricter rules regarding the quality of active ingredients and allow for increased monitoring of drug sales.

The department is seeking feedback on the proposals until Sept. 8.

Health Canada says the proposed changes will align Canada with policies in the United States and the European Union.

Doering speaks: Prudent use of antibiotics in animal production

Ron Doering, the first president of the Canadian Food Inspection Agency, writes for Food in Canada that while the medical community recognizes that the emergence and spread of antimicrobial resistance (AMR) in humans is a potential disaster for humanity, and that it is the overuse of antimicrobials in human medicine that is the largest contributor, there is still a broad consensus that the use of antibiotics in animals may contribute to the problem, though ron.doeringthe degree is still unclear.

The scale of the AMR crisis was dramatically demonstrated recently with the release on May 19, 2016 of a landmark re- port to the U.K. government that reckons that drug-proof bugs already kill 700,000 people a year and warns that that number is likely to rise to at least 10 million by 2050. I wrote a series of articles for this magazine in 2013 and in the spring of 2014 discussing various reports that attempted to assess the extent to which antibiotics in animals contributed to the crisis and I identified a number of regulatory changes to mitigate the problem that were necessary and long overdue.

 At spring the Canadian Animal Health Institute (CAHI), the trade association representing Canadian veterinary drug manufacturers, and Health Canada (HC) announced their intention to work together to develop a policy on prudent use of antibiotics. They promised (1) the removal of growth promotion and/or production claims of medically important antimicrobial (MIA) drugs and (2) to develop options to strengthen veterinary oversight of antimicrobial use in food animals. At the same time producer organizations were developing strategies to promote more prudent on-farm use, and veterinary groups undertook to develop new policies and procedures.

So, after all the promises, undertakings and commitments, how are we doing? I’m delighted to report: pretty well.

In March 2015 the Harper government announced the Federal Action Plan on Antimicrobial Resistance and Use, committing to move expeditiously on several regulatory reforms. I’m told that notices in Canada Gazette I are imminent and that these will bring in regulatory amendments that will remove growth promotion claims for all MIAs. Moreover, all MIAs used in feed and water would come under prescription drug status, bringing them under the oversight of veterinarians. CAHI estimates that this would bring 140 drugs under veterinary oversight.

I’m pleased to report as well that the federal government is finally taking steps to address the longstanding problem of animal owners taking advantage of HC’s own use importation provisions (OUI) to import for personal use active pharmaceutical ingredients (API) that are not approved for sale in Canada.

There are several problems with this regulatory gap, including the inability to know which antimicrobials are used in Canada, in what quantities and for what purposes. The new regulations will forbid animal owners to import MIA in finished form from other countries.

Major producer groups continue to take concrete steps to address the AMR issue.  The Canadian Pork Council continues to operate its model quality assurance scheme (CQA), which applies to all its members and represents over 90 per cent of hogs slaughtered in Canada.  The Chicken Farmers of Canada has embarked on a comprehensive process to develop and apply strict new rules to ensure prudent use.

ab.res.prudent.may.14The Canadian Council of Veterinary Registrars and the Canadian Veterinary Medical Association have been slow in responding to the challenge of AMR, but they have now developed a comprehensive plan and a detailed set of recommendations that will be the main topic for their annual meeting this summer. Veterinary medicine is a provincially regulated profession so getting all jurisdictions to co-operate to create a truly national system is not easy, but they seem to have made good progress in the last two years.

The food industry is always happy to respond to market demands for new food attributes, especially when it can charge a premium for them, and even when most of these claimed attributes (like, say, organic) will have no positive effect on safety, taste, quality or sustainability. Proof of prudent use of antibiotics is not one of these. While there is more work to be done, Canadian regulators, producers, processors and retailers have made remarkable strides to respond to the legitimate concern posed by AMR.
